The name Angel Hair evokes their lightness and fine texture. There is a dispute about their origin between the Genoa territory and the Napolitean and Ciociaria areas. It is one of the most delicate formats among the long nest pasta cuts: their thickness varies between 0.030" and 0.034". Angel Hair characteristically is recommended for children from 9 months and older because of their ability to help the younger ones adapt to solid food.
